In che blended finiscono i vostri Single Malt
Il XIX secolo è stata per l’industria delle bevande alcoliche una vera rivoluzione. Nella birra viene isolato il lievito a bassa fermentazione che rivoluzionerà il mercato mentre nel whisky l’alambicco a colonna, nato nel 1822 Perrier e perfezionato nel 1828 da Stein e poi nel 1830 dal più famoso Aeneas Coffrey, cambiano il corso della storia del whisk(e)y e del mercato aprendo la strada al blending e, successivamente , al declino delle floride distillerie irlandesi. Nel 1865 poi il Blending Act ne sancisce anche la nascita legale. Anche chi aborra il blending, comunque ci deve fare i conti considerato pure che molto del Single Malt, anche se sempre meno in percentuale, finisce nei blended. Ricordiamo che il blended (Blended Scotch Whisky) contiene una buona parte di distillato di grani diversi dall’orzo e che ha un profilo aromatico abbastanza neutro e che quindi il single malt, anche in dosi minoritarie, possa comunque caratterizzarlo in modo molto netto.
Ho un po’ faticato a trovare qualche referenza per capire in quali marchi i single malt vengano utilizzati, ma soprattutto grazie al Malt Whisky Yearbook qualcosa sono riuscito a recuperare. Casi famosi a parte tipo il Glenburgie e Miltonduff che sono i malti “impronta” nel Ballantine’s o Stathisla nel Chivas ma ci sono destinazioni meno note. Nel J&B si dice siano ben 42 diversi. In ogni caso ovviamente i contributori ai blended devono fare i conti con le suddivisioni delle distillerie tra i vari gruppi, anche se le casacche non sono totalmente rispettate, ad esempio Glen Grant che contribuisce ancora a Chivas. Diageo e Pernod Ricard ovviamente la fanno da padrone. Proprio Pernod, non avendo distillerie che di “linea” fanno torbati, si serve di distillerie che fanno distillazioni speciali e in particolare di Allt-a-Bhainne; non escludo prendano ancora del torbato da BenRiach visti i rapporti pregressi. Pare anche, per lo stesso motivo, che Glenfiddich faccia batch “segreti” di peated malt per alimentare il grosso mercato di Grant. Molte distillerie destinano quasi completamente al blending e capita spesso di trovare qualche bella sorpresa tra gli indipendent bottler, per non contare poi sulla famosa storia di Port Ellen, da malto per miscelazione a quello che conosciamo.
